Ingredients
- 1 1/2 c whole grain rolled oats
- 1 c lite coconut milk
- 1/2 c unsweetened, natural applesauce
- 1 egg
- 1/4 c. honey
- 1/2 tsp Vanilla extract
- 1 tsp lemon extract (optional, but the extra lemony flavor makes these really tasty)
- 1 tsp lemon zest (again, optional)
- 1 cup whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup fresh or frozen blue berries
Directions
- Preheat oven to 375. Grease muffin tins or line with paper liners.
- Mix oats, coconut milk, applesauce, egg, honey, vanilla, and lemon. Let stand for about ten minutes.
- Mix all remaining dry ingredients and gradually add to wet ingredients.
- Fold in blueberries and drop by the spoonful into prepared muffin tins.
- Bake at 375 for 15-20 minutes. Remove to cooling rack and enjoy :)
